If you are recording with stereo mix and the sound that is playing is panned all the way over to one side, then you can record that in one channel, so what you need to do is to have your microphone connected to a stereo input and have that panned all the way over to one side, and your other sound panned all the way over to the other side, then you will get your voice in one channel and the other sound in the other channel.

I would like to record a conversation for a podcast but the other person will be speaking over Zoom. To save myself the effort of editing the voices together in post, I would love to be able to record both the audio from my computer (stereo mix) and my voice into a microphone at the same time. If this is possible I would love help on this. Thanks!

On the "Recording" tab, right-click your mic, and select Properties. On the "Listen" tab, select "Listen to this device", and ensure the proper playback device is chosen. You should now be able to hear your mic through the speakers along with other audio, and it should be recorded along with everything else when you record "Stereo Mix" or alike.
